Breakfast Medley

Ingredients:
6 tablespoons muesli (grains & nuts only)
6 tablespoons plain yoghurt
your favourite fresh berries, chopped (about 3-4 tablespoons)
fresh and chopped pineapple (about 3-4 tablespoons)
mint leaf
Method:
Take a wine glass and start with 3 tablespoons muesli in the bottom. Add 3 tablespoons plain yoghurt and then add the fresh berries. Start again with muesli, then add yoghurt and lastly the finely chopped pineapple. Decorate with the mint leaf.
VARIATIONS: You can use any fresh fruit as listed in the Enjoy & Avoid booklet
Herb Omelette
(Vegeterian)
Preparation Time: 15 minutes
Servings: 2
Ingredients:
6 egg whites, at room temperature
30 ml water
non-stick spray
salt & pepper to taste
2 tablespoons finely chopped herbs
Method:
Beat egg whites and water lightly and season with salt and pepper. Spray an omelette or frying pan with non-stick spray, then pour in the egg whites and cook over a high heat, lifting the edges of the omelette and tipping uncooked egg underneath. When the omelette is set but still creamy on the surface, scatter over the fresh herbs. Cook for a few seconds more and fold the omelette over in half.
